RECIPE: Kerina's Spinach and Ricotta Scrolls

"Zoe loves these (great as a snack on the run) and they freeze really well." - Kerina
SPINACH & RICOTTA SCROLLS
  • 250g frozen chopped spinach
  • 1/2 cup ricotta cheese
  • 1 cup mozzarella or cheddar cheese grated
  • 3 sheets puff pastry
Combine spinach (lightly squeeze out excess water) and cheeses and mix well.
Halve each pastry sheet lengthways, then cut each piece diagonally so you have triangular strips. Place heaped tbs of mixture at the widest end and roll to close. Place on baking tray and bake 180 degrees C in oven for 20-25 min until golden.
